I work in television in LA and can confirm that DP is most commonly used...in fact most people will look at you funny if you refer to the cinematographer as a DOP.

Being able to adapt to the environment is the ability to survive in new and harsh environments as well as cope with changes in the niche we hold, you are sort of correct in that because we build our environment and have far more control over it than any other creature that changes are much less likely to occur but this does not mean that we will never be subject to it.

In natural selection and fitness it still essentially goes from 0 to 1 on a scale, you are a 0 if you have not yet had viable offspring, you are grade A winner number 1 if you have. That's it. Your ability to do this pretty much dictates you successful as far as evolution is concerned as you have passed on your genes (which must be acceptable to the populations fitness as you were allowed to reproduce) to offspring who can do the same. Evolution is far from perfect and the forces behind it can often create what we would consider complete failures of an organism (Dodo bird) but it works most of the time for the average of the population.

Fitness is still a thing, but that thing is just another word for natural selection. In population genetics measurement of species fitness is rather important but it does not mean what most people think it means, it is just the frequency changes found in alleles that are markedly more advantageous to those that are not in a population. This however does not mean that one population is "better" or "more evolved" than another in a different environment, fitness is entirely the ability to survive in the current environment to the best of its ability and changes that aid that increase fitness.
