Because in some sense we are the Universe experiencing itself subjectively. When everything was really really close together at the very beginning, you and I were infinitely close, as was everything else that you can see today. That tiny granule of energy is now experiencing itself as individuals, or in the least, individuals (which are it) are now experiencing it. Awareness of awareness is a mind boggling thing because that tiny granule somehow had the potential of being aware, now it is.

Dear people downvoting me: please explain how fish were the first living beings on Earth. The first ~3 billion years of evolution on our planet was nothing but microbes. The oldest known of very simple animals (similar to sponges) didn't appear until after 3.2 billion years of evolution.
Approximately 84% of evolutionary history to date happened before any animals, even sponges, came along. Just sayin', "the most astounding fact" would be even more astounding if it were presented with our more accurate and even more humble beginnings.
