Well we can't read minds yet so generally we just take a person's word for it when they say they believe in god.

But we have no knowledge whether or not this person believes in god, therefore we can neither state that he is a catholic nor an atheist.

Sometimes the only valid answer is "we don't know".

It wasn't clear, since you only said "we have no knowledge whether or not this person believes in god".

I had a feeling that you meant we don't know anyone's actual beliefs but I wasn't 100% sure so I didn't make any negative assertions about what your intent was I just posted the statement as is.
