Jefferson wasn't a non-believer, he was a deist.

This is the central quote inscribed in the Jefferson Memorial:

"I have sworn upon the altar of God eternal hostility against every form of tyranny over the mind of man."

He believed in God, just not the typical Christian version. The 'tyranny' he was referring to in this quote was the clergy in Philadelphia who were campaigning against him in his run for the presidency because they didn't consider him a Christian. Link to letter.

It might have had something to do with the fact that, in addition to being a chief proponent of the separation of church and state, he re-wrote the Gospels, editing out all references to Jesus being the son of God or performing miracles. Jefferson Bible

True, but that doesn't make the statement any less ironic, as "trust in god" would not make any sense to a deist.

Exactly. Deists didn't believe in a god that had any hand in our lives. According to wikipedia: "According to deists, God never intervenes in human affairs or suspends the natural laws of the universe." Why would a deist need to place their trust in something that will never intervene.
