Can someone explain to me how and why lightening spreads out in branches?

I assume the simple answer is to look for the ground, but surely gravity acts upon it somehow...?

No because lighting is pure energy thus gravity has no influence on it. Also the branching of the lighting is what happens a fraction of a second before the main flash of a lightning occurs, this GIF is just the slowed down version of any normal fork lightning.
