Well, maybe they do evolve in the same way, since there are "extinct" specimens. My beef has always been that the proper term for the evolving that happen in pokemon is metamorphosing.
Happens over the course of a being's life? check. Radically and irreversibly alters the body? check. Happens under predetermined circumstances? check. The only difference is that you can postpone metamorphosing indefinately, which can be handwaved into "part of the tech that happens to let you cram a whale into a large marble".
