The gif exaggerates the movement.

It's sped up and makes it seem the pilot just jerked on the stick and flew away like he was bolting somewhere.

If you watch the video (posted by TheDaddysboy) you can see what I mean - around 3:03

This maneuver is part of their final approach in landing.

It's known as "birds in the break".

They peel off one by one and land.

They will land in the order which they took off (typically by seniority if flying in a group) senior man takes the lead.

Cool nonetheless.
