Don't quote me but I think it has something to do with pig skin being very similar to human skin. I have a friend who practiced tattooing on pigskin stretched out like a canvas, if you follow me?

Yes, however you have to also understand the pigs that apprentices tattoo on are dead ones. Like a leg or a shoulder. Not the entire pig itself. Pigs are large animals and don't fit into most small tattoo shops. Plus, fake skin is cheap and simpler to get a hold of than tranking a animal just so you can tattoo it. Hell you can tattoo on fruit if you're in a pinch.
It's hard to practice on a live animal as you might imagine. Apprentices need to learn proper prepping in a sterile environment, not in a filthy pig pen with large potentially dangerous animals.

Many tattoo artists I have talked to test the speed settings, tattoo guns and colors on pigs first. As it it very close to human skin

Tattoo artist here: we do practice on pig skin, however not when the pig is still wearing it, usually we purchase it from the local butcher, it is used simply because it is very similar to human skin.
