Interesting side note there: the original design for the fish in Nemo were too realistic, children weren't able to identify with them, and the animators had to go back and cartoonify them.

Not just the fish. Everything, even the reflections from the sun in the ocean water were too realistic. So realistic that it was indistinguishable from camera footage. A first at that time.

Saltwater is denser than freshwater, so a bag of freshwater could float on top of the oceans surface. Sugar also makes liquids denser. A sugar-free drink will float on top of a pool, while a drink with sugar would sink to the bottom.

The cells of saltwater fish are adapted to high concentrations of salt. Because of the high concentration of salt, the cells don't need as much water. Take away the salt and the cells are getting too much water, and they eventually burst.

Also, if you put a freshwater fish into saltwater it would become dehydrated.

TL;DR: No, saltwater fish need the salt to survive.

Not too long, and already knew that. Let me rephrase my question: Are all those fish necessarily marine, or are there freshwater varieties? I looked up pufferfish earlier; the puffer fish have freshwater varieties.
Just looked up starfish just now: no freshwater varieties. So that answers my question.

Well, in the movie they were all kept in the same tank. A few came from pet shops, but one came from the ocean. The one from the ocean had been there a while, too. Since they all lived in the same environment for extensive amounts of time, none of them were dead, and we know at least one is a saltwater fish, we can assume they are all saltwater fish.

The difference in density is to small to actually make it float "on top". You will notice little bit of buoyancy but nothing like in the picture.

I thought the same, then I thought it might be the artificial gravitational field on the ship. And was messed up when the Rogue AI was fighting with the captain and he turned the wheels around. (and for that matter, why would you need a steering wheel on a intergalactic spaceship?)

But if the gravity is generated on the ship itself, it can turn and tilt as much as it wants, you wouldn't notice a shift in gravity (although you will notice the acceleration.

I'm pretty sure freshwater is lighter than saltwater. So if the bags are filled with freshwater, i guess it makes sense?

They are saltwater fish though. Seeing as how Nemo was taken from the ocean and then put into the tank. I am going to assume it was a saltwater tank, otherwise this kills the fish.

It's not like a balloon where the gas inside is under pressure and so bursts outwards. There's seawater on both sides of the bag so it'd just deflate onto him.
