Nah, they go out, and alcohol doesn't really burn that hot. The popular one where I used to drink was the "Statue of Liberty"...You were supposed to dip your finger in the flaming drink, then hold it over your head while you drank the rest.

Typically you blow it out first though, unless you hate your nose hairs.

You're supposed to take it quickly and shut your mouth, cutting off the oxygen which in turn would put out the flame.
