I've had Sriracha around the house for as long as I can remember. Problem is, it used to be so much spicier and fresher! The kind of thing that would make my ears burn and my face sweat. The stuff I find in all the stores now is like a slightly improved version of ketchup. It doesn't excite me the way it used to. I always keep my fridge stocked with this. It's pretty much a chili paste with about the same consistency as ketchup. I use this on scrambled eggs, fajitas, packets of noodles, etc.

I also make a hot wing sauce with sriracha, cholula habanero sauce and butter. Soooo good!

Back when I was a broke freshman in college (97) we used to make Srirach-dogs. Basically a hot dog bun loaded to the gills with this stuff.

One thing you can't get anywhere (not even at Costco) in Korea. I always suspected the absence of importation could be due to fear of it being much more flavorful and spicier than your traditional Korean hot sauces. Korea has a lot of national pride.
