Ugh, these dudes are delicious. They were right next to that kamaboko/fish cake stuff in a handful of grocery stores in Hawaii.
If I remember correctly these are made up of soy, generally used as tasty garnish in noodly soups like udon or ramen. Now I want to get my hands on some.

they put these things on sandwiches and salads all over Switzerland, and not just at crappy fast food places but at cute little bakeries with fresh whole grain breads! its crazy..Switzerland? whyyy???

Because people feel cheated if the slice of hard boiled egg on their salad is from the end of the egg. There's little or no yolk, and it doesn't look as pretty as a slice from the middle of the egg.
So restaurants use these things - factory separated egg yolks and whites, re-combined into one long "egg." Everybody gets an egg slice that looks good and has a nice round yolk, without any waste.
Most restaurants that serve scrambled eggs aren't making them from fresh-cracked eggs either. They come in a box, and are poured right into the pan.
yeah, i understand japan or the US would use this, but switzerland is KNOWN for their excellent organic dairy products! and i looked for them in every grocery store i went into there and they were no where to be found...

Eggs aren't dairy. Though yea, in a really good deli or something it would be weird to get the prefab long-eggs.
And yea, it's odd, I've never seen long-eggs (or whatever they're called) for sale in a grocery store. Hell, I'd buy them just for novelty. I've heard they're available in Hawaii, but I've never seen them in New York.
i know eggs arent dairy but they usually seem to be associated with dairy products

I work at a gas-station in germany and we have these too. Like almost every place that needs sliced eggs. Not a japan thing. Not unusual.
