I can certainly not agree with a definition of art that excludes what is not beautiful. Discussing what is beautiful is aesthetics. Art is just about making stuff that expresses stuff.
You could potentially have artistic preferences that include only the art that is conventionally good-looking, but even with this kind of attitude, you are missing out on a ton of art styles that are not meant to be pretty. From classic artistic genres like Wabi-sabi that is not oriented toward beauty at all to Witkin whose core artistic point of picturing the social outcasts and the socially unacceptable necessarilly goes against conventional notions of beauty, or the Museum of Bad Art who raised ugliness to an aesthetic notion of its own.
My definition of art may not please you, but it is my definition, after all.

Saying it "protests biosciences" is pretty simplistic. Actually, I think it's interesting because although our initial reaction may be one of horror (or WTF-ness), that's clearly not how the human-manatee hybrid is being portrayed--he seems to be a member of the boy's family, someone much-beloved, not a monster. If anything, the artist is simply exploring the boundaries of what constitutes humanity in a possible future where genetic engineering allows for such manipulation of the genome.

There, the depiction of maternal affection among creatures that initially seem monstrous, but in which, after a moment, we can begin to recognize some part of ourselves. One of the reasons I like Piccinini's work is because it plays with expectations versus actual depictions so brilliantly--the unvarnished description of these works does sound like your standard, unthinking condemnation of science, but like all good works that explore the possible outcomes of technology outpacing our current ethical understanding, we're asked to confront both what is initially unsettling, but what is also beautiful about such potential futures. If you and I are thinking of the same sculpture, I actually find it kind of endearing.
You know how impatient you probably get when people write off science and scientific thought (indeed, you may think Piccinini is one such person)? That's how impatient I get when people deliberately write off art, or don't examine it closely or attempt to delve beyond first impressions. Any good artist worth their salt produces work that rewards closer interrogation, and an artist of Piccinini's caliber rewards such interrogation richly. I think of you approach her sculptures, not ready to leap to the defense of science at the first sign she is criticizing progress (and to be fair to the artist, science has done things that are deeply unsettling even in retrospect, like the Manhattan Project, the Tuskeegee syphilis experiments, etc.), but open to compelx interpretations, you may find it more appealing than it seemed at first.

The difference is that interpretation of art is an opinion whereas scientific fact is, well, fact. No one's going to die because they couldn't be treated by a medical technique held up by a refusal to consider a painting.

I am not contesting that. I am saying, however, that the dismissal of either out of hand is a kind of ignorance, and neither reflects well on one's character. Humans are as much creative and artistic beings as we are rational and scientific, and to neglect one element of the human experience is to do a disservice to our essential nature.
Edit: Also, while the interpretation of art is indeed partly based on subjective aesthetic reaction, you can't dismiss it by reducing to mere "opinion." Art (and literary, and musical, etc.) criticism is an intellectually demanding task, one that requires perception as well as creativity. It may yield no equations that govern the universe, but it is still knowledge worth pursuing.

A child's ability to confide in and unconditionally love others is pretty evident. This captures that. We learn so many of our fears, disgusts, and hatreds.

It's an incredibly life-like sculpture made on plastic and inverse painted. The artist once worked for the special effects industry. His sculptures are either larger than life, or very small but all are eerily life like. He applies paint on the inside of the mold just before the plastic is injected. I saw his exhibition a few years ago when it went through the Kimball Art Museum. It's very VERY good.

I felt the same way. Something about the contrast between my initial revulsion towards the seal-creature and the total contentment on both it's and the kid's face. On second glance, it's really just a picture of a kid and (in my mind) his dog. The kid doesn't know that the critter is ugly or repulsive. He just knows it's something he loves.
