I wouldn't suggest it. Someone will call you out for not knowing what you're talking about. You've got to remember your prefixes.
polytheism = the belief in many gods
atheism = the belief that there is not a god
monotheism= the belief in one god
Using more than one is redundant.

Atheist does not mean you don't believe in one god, it means you don't believe in any god.
To throw poly on the beginning isn't even redundant, it's grammatically incorrect.
That doesn't mean you can't use the fact that you don't believe in any god in an argument, but calling your self a polyatheist is simply incorrect.
