That fuckin' dude is pumped! When I cook fish, I like to put kosher salt, butter, and black pepper on it. Then, I get a 50/50 mix of olive oil and butter happening in the nonstick pan, and right it when gets pretty hot, I throw it in flesh-side down for about a minute or so. Once it's got a good sear, I turn the heat down to medium, and turn it over and let it cook through. If it's trout, sometimes I just eat the skin too. If it's salmon, the skin peels right off, no hassle.
