It's the Best hot sauce ever!!! I'm very surprised how widespread it has become. Kudos to them for making a great product, selling globally with great "underground success" with very little marketing apart from word of mouth. That part of the shelf at my local supermarket is CONSISTENTLY empty :-(

I wholeheartedly agree. The pepper and capsaicin-based spicy things always make your mouth burn, but it's always the horseradish-style things like wasabi that do the nose. At least in my experience, maybe it differs.

An added benefit of horseradish-style heat that I like is that you can easily wash away the burn with water, as opposed to capsaicin-based hot.

That's what I hate about wasabi and why I don't understand how people can think it's super hot. Even when I was a sushi noob and applied it to each piece instead of mixing it with the soysauce (didn't have a suitable tray anyway), it would always cause terrible nose burn from the fumes (but it probably looked funny when I squeezed my nose like a diver), but never reach the burn of true hot sauce. Maybe if you apply even more wasabi, but I wouldn't dare to do it..nose burn is serious business :p. Mixed with soysauce it's not even half as bad, but I'm not trying to kill the taste of the fish.

Really? I'm pretty sure it was a sushi chef, who told me that and it's alot more convenient to mix a bit into the sauce than to add it to every piece (which would always end up with a few rolls that had to much and killed the taste).

Actually: http://www.busterbrands.com/ They sell capsaicin nasal spray for migraines and they work wonderfully. I used to get migraines and tried everything. This shit works in about 30 seconds. It burns a bit, but then wears out your nasal pain receptors or something to that effect. Migraine gone! Love that shit.

I've eaten a large bite of wasabi paste before. I felt a strong shock at the base of my skull and then a stabbing pain in my head. It was rather freaky. It's like an electrifying brain freeze.

At least hot sauce pain stays local.

It's good stuff but I'm a bit apprehensive about eating large amounts of it now.

I saved my mother from a terrible fate. She thought wasabi at the sushi place was guacamole and was about to eat what could only be described as a torturous amount.

Also really depends on the type of wasabi. Real, fresh wasabi paste is less potent than the stuff that's made with dried horseradish/wasabi powder.

If you can eat a big glob of it without being visibly shaken, you are not human.

Oh, I'm pretty sure that I was visibly shaken, it was a single mouthful of an amount served on a platter of sushi & sashimi for two. I thought it was some garnish, very quickly realised my mistake.

I think wasabi actually thickens nasal lining, making it harder for you to breathe in the long-run.

EDIT Study Conclusions: Oral ingestion of wasabi is well tolerated. While it appears to cause a subjective sensation of increased nasal patency, it actually congests the nose.

But I'll be honest; I haven't done much research on the subject, nor am I confident that this study is reliable.

Yeah, I'm speaking more anecdotally. There doesn't seem to be much research done this, which just by itself says that if there are long-term effects, they are small. Still, I would advise against using wasabi for the sake of clearing your nose. Just get a Kleenex.

Is it much better than Tabasco? I really dislike the sharp note in Tabasco that kills most foods with the annoying taste it leaves. I really want to try Sriracha (with all the hype that's going on), but the stores only have cheap ripoffs (that don't even look remotely like the same sauce) and the only store with asian goods, that might have it in stock, is on the other side of the town.. I tend to use more traditional hot sauces for Mexican food, but use Sriracha for any other type of food that needs heat (ie Pretty much everything :D). You get a lot of the pepper flavor out of it as opposed to all the vinegary-ness you get with Tabasco. As for finding it, most grocery stores I find seem to carry it. I've even seen it in Super Walmarts... Just make sure you are checking in the the ethnic food section and not with the regular condiments.

Also try the Chili garlic sauce (in the screw plastic jars) if you find Sriracha to be too sweet for some sauce bases (versus flavor adder).

But anyways it isn't hype. It's a great way to flavor all sorts of food. I very much dislike the taste of Tabasco.

I have to ask, while I love this stuff, it never tastes right after long, why?

Does it not age well? I figure the restaurants are swapping it in and out constantly therefore its "fresh"er than my home supply.

Also once someone accidentally sticks it in the fridge its flavor just becomes slightly odd...

It could also taste odd on what I am eating, it doesn't quite match the flavor or my microwaved burritos the way Taco Bell hot sauce does. It tastes great on Chinese food, especially fried rice, but not much else that isn't from an Asian restaurant.

I remember trying to put it in the fridge very quickly once and closed the nozzle on the top while there was still a small amount oozing over. A tiny globule of it shot directly into my right eye. It stung worse than that time I had chemical sand fly into my eye and remain there for 7 hours when I was in first grade.

This stuff is basically like sweet spicy catsup. It's closer to a banana pepper or peperoncini. The vinegar is probably what is giving you a decongestant effect.

I like Sriracha because it's sweet - but the ingredients go: Chili, Sugar, Salt, Garlic, Distilled Vinegar, etc. If one can tolerate something generically named "Chili" (milder than jalapeño), then the Sugar/Salt/Garlic kicker is going to be very pleasurable to the palate.

Upvote for chowing habaneros! My brother has always made what I thought was insanely hot chili con carne, and I used to hate it. I dunno. This will cost me massive karma, but still, here it goes: I don't really like Sriracha. Or better: I think Sriracha is o.k., but for my taste it is too garlicky, the heat is unrefined and at the same time not hot enough. The problem I got with that is not the sauce itself, it is the fact that most asia eateries around here switched their home made hot sauces with Sriracha, simply because it is cheaper and more convenient. But a delicious Banh Mi or stir-fry needs the heat of real chilis to reach its full potential. And Sriracha just does not deliver.

I also believe that Latin America, especially Mexico, is WAY more refined in anything chili related then Asia. They got chilis - especially habaneros, my absolute favourite - that actually taste good. So no, for me Sriracha is NOT is the king of chili sauces. My votes goes to Mary Sharp's Habanero Hot Sauce.
