Being color blind I can limit the man's selection even further.

Also Champagne is a drink and chartreuse is a made up word.

As a theatrical lighting designer, I would have to be on the woman's side here. I can detect the smallest difference in color.

I hate this stereotype, because I can tell apart shades and name them and I am constantly told by females that i must be wrong just because I am male.

I think the reason women notice the differences in shades is because of practice. Compared to most guys, a woman will pay much more attention to how things, like what she's wearing, look, which would naturally train her to notice the patterns and variations. I'm a guy, but I have some experience working in ceramics studios, particularly with managing the glazes (which have many colors, shades, and silly names), and I've noticed that many of my friends don't see the variations in colors the way I do.

Any other color-involved people (particularly guys) see more colors than their friends from practice?

Absolutely I do. I am a theatrical lighting designer. I can distinguish between very small differences in color.

Maroon cantalopue and sea foam are in the wrong categories for me.

That's ridiculous, everybody knows that 'spindrift' is more of a periwinkle.

If you use wallpaper instead of paint, then I hope you die painfully and often.

science has proven that women have, on average, significantly better color perception, regardless of background or interests, particularly in the warmer ranges (men are more equal in blues and violets).

Edit : the foundational study, although there have been many following it over the past decade, for the people who would rather downvote than look something up themselves. Perhaps "proven" was a bit strong, "demonstrated" may have been more accurate, but it's hard to predict what people will get their panties twisted over.

Cite or don't use "science has proven."

"science has proven..." is set to be the next "they say...", "I heard/read somewhere..." and "apparently..."

No, science has supported that there's a chance a woman will have certain genes that allow the perception in slight shade variations. Plenty of women don't have it, and it's not significant.
