If I'm not mistaken, this is something to do with the cones in your eyes getting exhausted at colors.

Something my high school art teacher did to explain the effect was putting up blue paper over the windows, and then shutting off the lights. After five minutes, we filed out into the hallway, and everything had a strong orange tinge to it.
