Invert the colors in RGB mode for best effect. It does not work quite right in CMYK mode.

I could notice my eyes adjusting to the color change.. It wasn't a gradual change, there were 3 distinct phases. I love this image.

No it doesn't. The illusion here is caused by burning the opposite colours of the surroundings into the retina, so that when they disappear they overlay the black and white and appear to make the image look coloured.

The phenomenon you describe is probably just cognitive association with colours experience in the real world. Say if you watch a tennis match on a b&w TV for a couple of hours, the grass can appear to look green because your mind knows that IRL it is.
