I think it just looks that way because the border of the cut-out is shaped weirdly. There are aerodynamic considerations to a projectile, they certainly don't get smashed up somehow.

Older guns mostly used a lanyard: pull the chain/cord near the breech and it fires the mechanism. Some models were made with a joystick trigger so a sitting crewman could fire more reliably on command.

I assume the green thing is the projectile that is fired. So why does it get deformed just before firing?

That's just the gif. The shot gets pushed past the cut-away of the gun at the last moment there: nothing is actually happening to the projectile.
