Well I know it's a sheet of metal, but once formed it becomes a type of tray. In Australia (and I'm guessing England too) anything hard and flat used for putting things on and transporting them is a tray, always, never a sheet. If the tray is used for baking then it is a baking tray. If it is primarily used for baking biscuits (what are cookies?) then I guess it would be a biscuit tray.

Still not a sheet. A sheet is flat, like a sheet of paper, a bed sheet or a sheet of metal. A tray has edges, making it not flat.

Yes I know a fitted sheet is not flat, but use of the word sheet to describe a bed sheet has far more history than fitted sheets. I was just trying to explain how an Australian would rationalise the language. In Australia, I've never encountered anyone referring to a flat hard surface used to put things on as any kind of sheet. Only a tray or maybe a board. Hence I find the use of the word sheet in this context to be amusing. Quite amusing. Quite.
