Btw, the trick to doing this is that you have to get all the interceptors out attacking something and then move the carrier away: but don't let it stop. As long as it stops the interceptors don't dock, so keep it on the move command until you're within 12 of your desired new target, then directly attack it and it'll "launch" all the interceptors at the same time.

(Note: as the interceptors don't dock they won't heal.)
