I had a dog that got bit by a rattler. The vet told me dogs don't usually die by the poison in the bite, they die from the swelling closing off their throat and they suffocate.

Correct, anaphylaxis is the same reaction that is caused by allergies (peanuts, bees, shellfish etc) and causes inflammation in many mucousal tissues including the tissues of the trachea (airway).

    He's trying to say "Because he survived, he should have a stronger immunity to rattlesnake bites, akin to the immunity garnered from a snakebite vaccine. It's like he got the vaccine, but from a snake instead of a doctor."

    This is actually somewhat accurate. It depends a lot on the circumstances, i.e. what kind of snake, did he receive antivenom as treatment, etc.

                                My cat was bitten by a snake and his face swelled up like this too, it really freaked me out, even though he was totally acting as normal. He came over for pats as soon as I saw him and was purring and smooching us. The vet said he was really lucky and a bit of his ear (where they think he was bitten) rotted off and stayed kind of bald since then, but he otherwise recovered :)

                                This is late but I'm gonna comment and hope you see it anyway. When I worked at a vet, on my very first day I met a little Pomeranian who had been bitten by a rattle snake. The only reason he was still there was because he was apparently allergic to the anti-venom and went into anaphylactic shock. Pups seem to take snake bites wayyyy better than humans do. Hope he is doing well!
