Yeah I agree, I stuffed that bit up, that's what led me having to pastry it instead of a good sear, solely to keep it together.

That was my first attempt, I dialed back the filling on further attempts, which made the rolling and searing process a lot more successful

I do that a lot. I mostly use Kewpie mayo though.

I use Gochujang more often than Sriracha now though...with a big pinch of Gochugaru added. Hotter, but a bit tangy.

It's a lot cheaper than Sriracha too.

This is the recipe I follow.

TL;DR: Put bacon into cold oven and set to 400F, bake until brown (<20 minutes), remove bacon and wrap in paper towels to absorb fat.

BLTs are things that are highly based off personal preference.

For example, I personally like really fresh bread, no tomatoes, really chewy bacon, and a large amount of lettuce.

But there are people who put things in their mayo, people who prefer toast, and people who do use tomatoes (obviously). There are so many things to do with a BLT... someone should make a website with different kinds of BLTs.
