Did Apple use topography data from before when the land was graded to build the runways and taxiways?

Yeah, I think that's pretty much it. They probably used DEM/DTM mapping from ages ago and then overlaid the current orthophotography on top. I wouldn't rely too heavily on this new map service until most of the glitches are ironed out.

No, they're using SRTM90/30, which have 90 and 30m resolutions, google probably did their own LIDAR scanning, which is much higher resolution DEMs
