Did Apple use topography data from before when the land was graded to build the runways and taxiways?

Yeah, I think that's pretty much it. They probably used DEM/DTM mapping from ages ago and then overlaid the current orthophotography on top. I wouldn't rely too heavily on this new map service until most of the glitches are ironed out.

No, they're using SRTM90/30, which have 90 and 30m resolutions, google probably did their own LIDAR scanning, which is much higher resolution DEMs

The assumption is that now that Google's data licensing deal with Apple is over, Google will just publish their own Google Maps iOS app.
